A fat molecule comprises of a backbone which is made up of glycerol and a tail which is made up of three fatty acids. Glycerol can be described as a tiny molecule which is made of just three hydroxyl groups (OH) whereas fatty acids are long compounds comprising long chains of hydrocarbons. These hydrocarbons are attached to the carboxyl group. Normally, fatty acids contain 12 to 18 hydrocarbons but can carry as low as 4 and as high as 36 hydrocarbons.
